Chef Mung (Moon) Law originally moved from China to New York City, where he gained valuable experience working in various Chinese restaurants to refine and enhance his culinary skills. Later, he opened Hanover’s very first sushi bar inside the China Inn, quickly attracting a devoted and loyal customer base. Alongside Tao Chen, he established the Full Moon restaurant, which offered a diverse menu featuring Sushi, Japanese, Thai, and Chinese dishes. As their popularity grew, they relocated to a larger space in the South Hanover Shopping Center. In 2010, the restaurant was rebranded as Blue Koi Asian Cuisine. Chef Moon’s unwavering goal is to serve the finest sushi and sashimi in the region, always using only the freshest ingredients, with a strict policy against using any canned or processed products.
